Scenes from the Easter Weekend.

Hello lovely people!

I’m sorry I keep taking days off the blog, I have just been absolutely shattered lately and sitting up to write posts is a bit of a struggle. ย I’m hoping that having been home for about a week now things will start to improve soon and I’ll feel a bit more like a real person…

Although I’ve been feeling a little under the weather it’s been a lovely weekend with lots of delicious food, happy company and even some chocolate ๐Ÿ™‚

Every year my mum and I decorate some egg shells as part of our Easter tradition, it’s one of those things I will always do, I think I will carry on doing it when I have children. Traditions like this one make me smile ๐Ÿ™‚

A delicious Thai meal we had on Saturday evening, I had grilled satay vegetables to start and a tofu stir-fry for my main. Such nice food, I could eat like that all of the time.

Easter breakfast (not all of that plate was for me don’t worry :-P) We decided against Easter eggs this year, they’re so overpriced, and instead opted for a selection of Hotel Chocolat chocolates – so so tasty!

My Easter baking, this weekend I decided to try my hand at lemon drizzle cake from a recipe in my Primrose Bakery cookbook. It was seriously delicious, it’s my new favourite cookbook, everything I’ve made from it so far has been amazing! It’s also really fun to bake from such traditional recipes, I’m so keen to become a more proficient baker.

Anyway, I’m feeling pretty tired after a long weekend so I’m going to say goodnight. I hope you all had a lovely Easter and that the week has started out well!

  1. I was baking a batch of lemon fairy cakes last week and decided to make half of them into lemon drizzle cakes – BEST BAKING DECISION EVER. They were so moist and tangy! However, I spent most of today battling with various batches of chocolate mousse, and never want to see a whisked egg white again. I’m glad you had a lovely weekend ๐Ÿ˜€

  4. It looks like you’ve eaten some delicious food over the weekend – your cake in particular looks good. I did eat some chocolaty things over the weekend, but I didn’t have any Easter eggs. I love Hotel Chocolat!

  5. your food looks delicious, but seriously, your portions sizes are scarily tiny! one roast potato on your plate?! thought you were supposed to be sharing a healthy approach!

    1. I take your point for that particular meal – I just don’t really like roast potatoes, and I took more meat, parsnips and veg as seconds. I’m not justifying my eating in anyway, I don’t feel that I need to, but you need to remember that at this point in time I exert myself very little so don’t need to eat as much as an average, reasonably active person.
