What I Ate Wednesday No.19

It’s Wednesday again! Which means it is only two and a half weeks till the Christmas holidays. And only two weeks till I see Tom again :-). And only a day till I open the first flap in my advent calendar. And…

It’s WIAW again!! Thank you Jenn once again for the chance to share Wednesdays with so many bloggers 🙂 (And for giving me the opportunity to snoop around what everyone else eats :-P)

My breakfast was my absolutely typical start to the day:

I do love my breakfasts, even if they are nearly almost the same!

Today I had a 9am lecture followed by a small gap before a doctor’s appointment. And I’m pleased to report that this doctor’s appointment was much better than the last. I think he’s starting to take me seriously and understand the severity of my pain and lack of mobility. I guess he had to take me seriously after I collapsed. So we spoke for quite a while about how things have been for the past two weeks and about the fact that things have gotten a lot worse since I got to university. I have to say, whilst I knew it was likely to get worse because it’s a whole new environment with a new routine but I am shocked at how much worse it’s become in the space of two and a half months. So as I only have two and a half weeks left this term he made the decision to double my dose this week and if that all goes without a hitch then double it again next week. We’ll see how it goes… I’m feeling a lot more positive about it though!

Lunch was pretty yummy, I tried these new meatless meatballs along with some whole wheat pasta, my homemade tomato sauce and some Parmesan. The dish was really good but I have to say the meatballs slightly lacked flavour, I wouldn’t recommend them without some kind of sauce or they are a bit bland. But still a very enjoyable cooked lunch.

This afternoon I did quite a bit of work and then laundry and food shopping. Both chores are pretty tough on me physically but I bought lots of nice food so it makes up for it! Hopefully I’ll be able to cook some more interesting and tasty dishes towards the end of the week.

As I was so tired when I finally got back I decided dinner was going to be a quick and easy option:

Dips. Made up of a carrot chopped up, half a cucumber chopped up, a handful of mini breadsticks and then some taramasalata 🙂

Followed by a little indulgence…

It’s hard to tell what that is in this awfully lit photo but the bowl consists of some greek yogurt with a teaspoon of nutella mixed in and then a load of frozen raspberries mixed in. The result? A creamy nutella and raspberry flavoured half frozen yogurt! So delicious.

Anyway I’d best be off, more work to slave over…

I’m Back!!!

Hello all 🙂

So after taking a blogging break over the past few days I’m back and ready to get into the swing of blogging again!

I missed you all, I love reading your comments and learning about you all!

I had a beautiful weekend with Tom.

Being in his arms, spending time relaxing together, chatting, watching Christmas films, eating good food, going for walks, browsing the Christmas Market, curling up together in the night…

I would give almost anything to spend my life doing all of it everyday.

He always makes me feel better 🙂

Today I woke up after a little lie in and I knew I was going to be better than last week after having such a lovely time.

I have decided that I’m going to make this a really productive week. It’s my busy week but this in a way helps me to keep the momentum going so I’m hopeful that I can get lots done! I’ve got lots of work and lots of admin stuff to sort out, we’ll see how it goes…

Breakfast this morning:

Weetabix mush with raw oats and frozen raspberries mixed in. A delicious start to the day.

I then spent the morning writing notes for the lectures I missed due to collapsing on Thursday (I’m fine don’t worry – just bruised knees and a grazed elbow!). I’m glad I’m back on track now, I hate getting behind on work. I also got going on some of my reading for the week and filled in a rather long form. Productive morning = positive feeling me!

I cooked up a large batch of tomato sauce at lunch, froze some, put some more in the fridge and then used some with my tortelloni.

I love fresh tomato sauce, especially with a pinch of chili. It added something warming and comforting to my lunch, topped with a sprinkle of Parmesan.

This afternoon I had two lectures but I had to say I had difficulty concentrating, I think I may be getting another cold. I’ll be making sure to get lots of vitamin C into my system in order to fend it off! Anyway I’m off to read some of my texts for this week. I’m determined to make it a productive and positive week!

What I Ate Wednesday No.18

Well today’s been full of ups and downs. I will explain all but first I figured I figured I’d share with you some of today’s eats in the spirit of:

Breakfast was the usual. I do love my weetabix and frozen raspberries.

Lunch was another of my typical foods: avocado on toasted bagel. Just like the weetabix and frozen raspberries, l love my avocado. It’s been one of those days were I just wanted quick, easy and comforting food.

This afternoon was the switching on of the Christmas lights so a few of us got together to go into town and enjoy the beginnings of the Christmas season. We enjoyed a lovely coffee first and I shared an oatmeal and raisin cookie with Trelawney which was pretty tasty. We then went to wonder around the German Christmas Market for a bit before the event started, it’s really cute so I definitely want to go back.

Unfortunately this is where the good part of my day ended. In our group was a guy who uses an electric wheelchair so, what with my cane, we obviously had difficulties getting through the crowds. The market square was absolutely packed with people just shoving past each other and paying absolutely no attention to those around them. It was getting ridiculous and so we decided we needed to get out of the crowds. Mistake. Some people are astoundingly ignorant. And so there we are, making our way (very slowly) through the crowds, trying to get people to move to let the chair through, when this guy starts shoving past. When we try to stand back as its clear that he’s not stopping he decides to start having a go and started mouthing off and swearing at me. I was shocked. He pretty much harassed me for walking with a cane. For being disabled.

I’m finding it a bit difficult to stomach if I’m honest. I don’t understand how some people can be like that.

And having that happen today has just compounded how I’ve been feeling lately and I’ve decided that I’m going to take a little break from blogging. Only for a few days, I’m sure I’ll be back at it again on Monday, but I just need a little time off and I thought I’d tell you in case anyone wondered where I’d gone!

I just need to clear my head, get on with some work and get my exercise and cooking ‘mojo’ back. I’ll miss you all though and I’ll be reading all of your blogs so although I’ve been  finding it difficult to find the time to comment I promise I’m still reading them all and enjoying hearing what you’ve been up to.

Hello Again, Remember Me?

How did I get so lucky??

This guy is just amazing, seriously, I feel like the luckiest girl in the world right now 🙂

Now enough of the soppy stuff!

I got back to uni around lunch time, rushed onto campus to give my essay in and then came back for a nap. I have yet to unpack and I never tidied my room before I left. Such is the life of a student even if it is completely out of character for me. I guess being permanently exhausted does that to you…

I have almost no food in the fridge so lunch was a bowl of tortelloni:

Some students eat take-out, some pizzas, some frozen food, and some beans and cheese on toast, me? I like to eat tortelloni when I haven’t got the time/energy to cook. Obviously it had to be covered in a liberal dusting of cheese.

 I also indulged in something I don’t normally eat (at least at this time of year) one of my flatmates offered me a mince pie and I couldn’t resist. I adore mince pies but I usually try to wait till December before eating them. It was pretty tasty but nowhere near as good as my mum’s!

Well I’m really tired so I’m going to leave you. I’ll be back tomorrow with better photos and a longer, more interesting photos and I will be taking at least a couple of hours to catch up on all of your weekends 🙂

Why am I so chirpy?

Two reasons: I just finished my first ever uni assessed essay (!!!) and tomorrow morning I am catching the train to go spend the weekend with my wonderful boyfriend 😀

What I Ate Wednesday No.17

Hello lovelies 🙂

I am in quite a cheery mood which is amazing considering I only had about 5 hours sleep last night!

I put it down to a mixture of things all of which I will reveal in this post, never fear.

But first, it’s that wonderful time of the week again…

… It’s WIAW! Time to indulge my nosey nature and scope out everybody’s eats :-). Thank you Jenn for giving me such a great excuse to do so!

Breakfast was so so good this morning.

Chocolate overnight oats with frozen raspberries. So indulgent, it tasted like a dessert! Definitely a good way to make up for a lack of sleep – I recommend it 🙂

I had a 9am lecture this morning so I was up bright and early and off to that and when I came back and worked like a daemon! It was the most productive day workwise I’ve had since being at uni so I was pretty pleased with myself. What, you might ask, was the motivation behind this hard work? I decided to take an impromptu visit up to see my boyfriend this weekend! Basically I’ve been feeling a bit oppressed here at uni this week, the small space really doesn’t suit me, I need to get out of the uni bubble and I just really miss Tom so I knew I need to work really hard for the remainder of the week so that my weekend is free. Nothing like love to make you work hard 😉

Lunch was a repeat of yesterday’s:

It really is a lovely mix of veg.

This afternoon was more work and then my bi-weekly doctors appointment. It didn’t go how I expected and I’d rather not dwell so I won’t talk about it now. Anyway I was soon cheered up by my evening fun.

Trelawney and I decided we needed to get out so we went for another Orange Wednesday meal out at Pizza Express 🙂

I’m afraid I was not in the slightest bit adventurous with my food choices and pretty much went for exactly the same thing as last time! But you know what, I really enjoyed it last time and it was just as good this time so I don’t even care 😛

The only slight variation to the meal from last time was dessert. After our light pizzas we decided we were still a little hungry so we decided to share a mini chocolate fudge cake which I had alongside another Baileys latte 🙂

What do you think of the classy christmas decorations on the cake? 😛 Despite its appearance it was actually really tasty so all’s well that ends well!

I’m really pleased with myself, I’ve managed to nearly finish my essay today so I’m feeling a lot more relaxed about my work this week. I have a manically busy day tomorrow though so apologies in advance if I don’t manage to post!
