Another Goodbye

I’m afraid I’m going to have to say goodbye for the next 5 days, I’m off to visit my Grandparents in France and they don’t have internet 😦

However you’re in for a treat as I have some great Spain photo recaps scheduled for this week! My favourite’s the food post 😉

Anyway on to todays activities.

My family also decided to crack out the barbecue today. Cue lunch.

My Granddad came round for lunch today and my Mum always makes dessert when we have any guests, even family! This was delicious 🙂

Today was mostly spent tidying, packing and writing the blog posts for next week but I was pleased because I managed to go to mass this morning. I always feels it relaxes me and puts things back into perspective.

If lunch was good, dinner was even better. We had a mix of Moroccan and Mediterranean meze. Falafel, stuffed peppers, aubergine salad served alongside hummous, tzatziki and baba ganoush. Yummy!

Anyway I’d best be off to sleep, I have an early start tomorrow.

Just How I Like It

Well it turns out life can get in the way of blogging more than once in a day.
However, yesterday was such a great day that I don’t even really care!

The morning was slow and lazy. Just how I like it.

We enjoyed a delicious lunch:

My favourite pasta salad with avocado (yum!), rocket, bacon and a yogurt based dressing.

However laziness has its limits. I soon felt the urge to do something productive.

When in doubt, bake.


Bright fluorescent blue and yellow  iced, sprinkle topped, vanilla flavoured cupcakes to be precise.
Tom helped, especially with the creaminy. It requires liberal amounts of elbow grease when you bake the old-fashioned way.

Why cupcakes you ask? To take to a barbecue with Tom’s neighbours on the green outside their house. Lovely warm, sunny weather and open green space.

The children were having a whale of a time.
Three of them, all absolutely adorable, adopted us.
We played endlessly on the trampoline, being chased and jumped on.
I loved it really.

Fitness Friday

Sorry this post ended up being later than planned, sometimes life just gets in the way!
I ended up cooking for everyone this evening (everyone being myself, Tom, my sister and her boyfriend) and then we watched Deep Impact. I’d never seen it before and as I cry ridiculously easily during films you can bet the waterworks started as soon as things started going wrong! The moments when everyone had to say goodbye to their loved ones were the worst!

Dinner was nice and fresh:

Spring greens and noodle stir fry. It’s a lovely light meal and yet somehow I’ve ended up with a stomach ache :-S (which is the reason for the late and somewhat brief post).
Despite the resultant stomach ache it was pretty tasty!

And now to what I hinted at earlier:

In the last few weeks I’ve definitely fallen off the exercise bandwagon and as a consequence I’m feeling tired and sluggish a lot of the time and I’m definitely not in “fighting shape”. My idea is to start ‘Fitness Fridays’ where I make a (rough) plan of my exercise for the following week in order to motivate me to workout as I’ll be held accountable by all of you! I’ll also do a recap of the previous week so that I can see whether I’ve met my goals. Hopefully I’ll get back into the swing of things fairly quickly, I definitely want to get back into strength training several times a week as well as some more intensive cardio 🙂

Unfortunately, as I said, I’m not feeling that great so I’m going to wait until tomorrow to actually plan my workouts for next week. I promise my goals will be up asap!

I’m Back!

Hello bloggies, I’m back from sunny Spain!

I have to say I really missed blogging this week, I’ve only been doing this for a week but it’s had quite a large effect on me. I love having something positive and productive to focus on and seeing that people are reading gives me immense satisfaction :-). I’m definitely going to carry on for the foreseeable future!
I’m looking very slightly tanned as it was on average about 32°C and even reached 37°C (way too hot in my opinion!). It was a lovely break, we stayed in Andalucia, in southern Spain, in a cute little cottage near the coast. The accommodation was pretty good, we had a brilliant outdoor space with an outdoor sitting room and a little pool which was great for cooling down in. We had a fantastic time, the area was full of interesting places to visit and we ate some absolutely delicious food! Full recaps with photos will be up next week 🙂

Having said that, being home feels lovely. I’m definitely the kind of person who prefers home to away and I do quite like my daily routines 😛

Breakfast today was pretty simple because we didn’t have much food in the house seeing as how we had only gotten back at 11pm last night.

Weetabix mush with milk and topped with blueberries and a dusting of cinnamon :-). My favourite!

And as I’ve been away for a week today obviously had to be a meet-up day with the Boyfriend :-). It’s only been a week but before that Tom was away for 2 weeks so it feels lovely to be together again. This weekend I promise I will do a post to properly introduce him!

We went into town and bought lunch to have outside in the not-so-sunny weather 😛

I got cous cous with butternut squash, dried fruit, pomegranate seeds, lettuce, spicy chicken pieces and a minty yogurt sauce. Delicious!

We then took a trip to Starbucks and got comfy window seats to people watch (one of my favourite hobbies :-P)

My usual skinny vanilla latte 🙂

I will be back later this evening with a new post idea, more on that later…

Acceptance is…

Hey there!
I hope you all had a good start to your week 🙂

Whilst I was trying to come up with interesting posts to write for you to read during my time away in Spain I stumbled across a sheet I was given at the Pain Clinic earlier this month. It’s a sheet on learning to accept your condition in order to move forward and although it wasn’t particularly useful for me in that context (I’ve already accepted my condition) it highlights some interesting issues.

In life things often get thrown at you over which you have little to no control. For a lot of people (myself included) it’s difficult to cope with things we have no control over and this can lead to stress and anxiety. It’s important to remember that just because you have to change your plans or your goals does not mean you have failed in any way. Adjustment and compromise are signs that you are dealing with the problem in a positive way.

Acceptance is not:

  • Surrendering to the problem
  • A sign of weakness or inadequacy
  • Quitting
  • Failure

Acceptance is:

  • A willingness to think about change
  • Understanding that the problem you’ve encountered does not have to rule your life
  • Focusing on the future
  • A positive way of approaching your problems
  • Working towards finding a solution for your problem

Acceptance is not easy. It takes a strong person to accept their problems and move forwards. Acceptance is an emotional task involving coming to terms with something that might be senseless, confusing, undeserved and imposed upon you. Acceptance needs to be reached if you want to move forward in your life.

Acceptance is just a positive step in the right direction.

What do you see in your future?

In Five Years…

What will be your favorite hobby?

Photography, I’ll have bought some exciting new lenses, like a macro lens, and will hopefully have improved lots! (Obviously I’ll still bake :-P)

What’s in your refrigerator?

Mostly vegetarian stuff hopefully. Lots and lots of fresh fruits and veggies, especially raspberries, blueberries, tomatoes, courgettes, avocados and spinach. Milk and greek yogurt. Maybe tofu? Hummous. Other dips and spreads. Fruit juice.

What will your fashion look like?

I have no idea, probably not that different from now. Maybe a few more tailored pieces? Maybe even some work clothes…

In Ten Years…

Will you still be blogging?

Who can say? I hope so! It’s so fulfilling that I can’t imagine wanting to stop but you never know with life. Maybe I’ll have a new blog and built up a huge blog following! (I can dream :-P)

What will your work day look like?

Wake up early, workout (I want to be one of those people!), eat a delicious breakfast, cycle to work, do productive and interesting things at work (whatever it is), cycle back from work, relax with my boyfriend, blog, read, cook, sleep!

What kind of car will you drive?

None! Or if not maybe one of those hybrid, eco-friendly cars? Maybe we’ll all drive electric cars!

In Twenty Years…

How old will you be?

Gosh, I’ll be 38!

Will you still be working?

Well something will have to be horribly wrong for me not to be able to work at 38! Maybe my hips will even be better :-). Even if I was a stay at home mum I’d still want to work on the side, probably write and maybe even train?!

What will your significant other look like?

Well… I’m going to pretend that I’m being reasonable and say who knows… but really I’m thinking he’ll be about 6ft, dark, fit, handsome, with gorgeous deep brown eyes and that smile that makes me giddy 😉 (I can’t imagine anyone else sorry! I promise I will introduce my guy on the blog when I get back!)
