Well. This is it.

Tonight is my last night ever in my university accommodation.

Tomorrow morning my dad is coming to pick me up and help me finish packing. Then I’ll be jumping in the car and saying goodbye both to my flat and to this university.


I still feel as though it hasn’t had time to sink in but I’m still feeling pretty positive about everything.

Posting has been pretty irregular and I’m really sorry about this! Things will definitely be back to normal from tomorrow once I’m back home, there are lots of exciting things happening in the next few weeks so I can’t wait to tell you all about those 🙂

I left Tom’s around lunch time which was sad as I’ve had a really fantastic couple of weeks staying with him. We are incredibly close and getting to be together for such a lengthy period of time was such a treat. I’m feeling a bit soppy right now so I just have to say how lucky I am and how grateful I feel to have such a wonderful boyfriend!

… Okay I’m done. Sorry 😉

Anyway I’m off to bed, I’m absolutely shattered from the journey and I had another rough day yesterday (I napped for three hours, missed most of a barbecue party, collapsed… but that’s over now!)

What I Ate Wednesday No.34 – Rather Delicious.

Yep, you guessed it! It’s time for another round of WIAW…

Rather than share a typical day of food with you, I want to show you some photos of the rather fantastic food that I’ve been eating with Tom this week. You are definitely in for an absolute treat!

Breakfast here is my usual staple, bowl upon bowl of weetabix… I thought you wouldn’t be interested so I’ll go straight to lunch:

A rather tasty tomato chicken pasta salad bought from Boots (along with a couple of lipsticks I just couldn’t resist!)

Along with pretty nice lunches I’ve also been enjoying several cups of this stuff:

Caramel lattes are the best way to warm up when the rain is falling heavily outside. As you may have guessed, Tom and I have spent many hours sat by cafe windows watching the world (and the rain) go by.

However, the real treat I’ve been eating this week has definitely been dinner. On Monday night a group of Tom’s friends decided to go watch the football in a pub and then take a trip to the cinema to watch Men In Black 3. We thought the time in between would be a perfect opportunity to grab some dinner 😉

Scampi and chips from a local fish n’ chip restaurant. The scampi was lovely and fresh and the portion was perfect – I ate the entire plate. Well we wouldn’t want it going to waste would we? 😉

I was a little apathetic about the film beforehand but it actually turned out to be pretty funny, I enjoyed it and it was fun to go out with Tom’s friends.

Now, I have definitely saved the best till last!

Last night Tom booked us a table at a really lovely restaurant and we dressed up for our three course meal together, to celebrate the end of exams and the start of our summer together. It was easily the best meal I’ve eaten in ages. Tom wore his gorgeous new blazer from Zara and I wore my favourite maxi from FCUK, I think we make a pretty smart couple…

To start with I went for a dish of spicy aubergine crostini which was fantastic.

Tom decided to have an avocado and prawn starter which looked really good too, it would have been my second choice!

For the main course the choice was clear and we both went for the same thing. A dish of fresh trout served with gorgeous greens and a special potato mash. It was just wonderful, the butter sauce was absolutely delicious!

Finally, what could better complete a beautiful dinner than an amazing chocolate pavlova (mine) and the perfect crème brûlée (Tom’s)…

It was such a brilliant evening, we strolled back home around 10pm when it was still light and settled down with full and happy stomachs. I only have a couple of days left here with Tom before I head back home for a week. I have been having the most amazing time and I am so lucky to have Tom, he makes me feel like one very lucky girl!

Goal Check-In.

I’m sorry I haven’t been blogging that regularly for the past week, as many bloggers say I’ve been taking time off to enjoy life and it feels pretty good. I have lots too share with you and tomorrow I will have a post for you full of photos of delicious food. Today however I thought I would let you know how my June Goals are progressing…

Read at least 4 books – I finally finished reading Vanity Fair a couple of days ago, I’m pleased with myself for plowing through as it felt like it would never end! It was fairly enjoyable though as I enjoy Victorian literature and it is interesting to be able to compare it to both Dickens’s Bleak House and Eliot’s Middlemarch. I am currently reading The Alchemist by Paulo Coelho which is really a fantastic book and short too which makes a nice change.

Try a new baking recipe – I haven’t been home yet so this has not materialised but I have plans so watch this space.

Go the entire month without biting my nails – I’m pleased with how this is going, I’ve bitten one of my thumbnails a bit but I bought a beautiful new Models Own nail varnish in the colour Golden Peach. Having nail varnish on definitely helps to remind me not to bite and about half of my nails are starting to look quite nice.

Work on my strength – this has been a little more difficult than I anticipated, mostly because I’ve been feeling pretty exhausted from all of the walking we’ve been doing which is at least 3 miles a day. I have done a few exercises here and there but I’m struggling so I will wait a little and work on this more once I am back home.

Journal more regularly – this has to be my favourite goal this month. I don’t write in my journal everyday but instead write several pages as and when the mood takes me. You all know that I love to write and filling the pages of my black leather-bound diary makes me happy. I love the way it feels to hold a pen in my hand and I enjoy pouring my thoughts down onto paper. I will probably never read back what I write but it helps me to process my feelings.

Still Here, Still Having Fun.

Hey lovely people!

I am still alive and well, I promise. I’ve just been crazy busy enjoying life and freedom with Tom. Despite the absolutely foul weather we have had for the majority of the week, we have had heaps of fun and it still feels absolutely amazing to be free.

I apologize for the lack of posts in the last few days, I had all intentions to write one yesterday but then, as you might know if you follow me on twitter, I completely crashed. I’m not complaining though as I saw it coming because we walked around 8 miles in total on Thursday (I actually haven’t walked that far in months). I spent the entire day in bed, never changing from my pajamas. Sounds lazy but believe me I really needed it.

Before I move on to show you some of the food I’ve been eating, I just want to say thank you so SO much for all of your lovely comments on my last post. I was really touched to read so many encouraging and supportive comments. Receiving wonderful kind words like those are what make blogging such a rewarding activity and I’m so grateful for all of your continued support!

As I mentioned before, it has been raining pretty much everyday here which is somewhat depressing but despite the weather we have left the house everyday (apart from yesterday obviously) and this means one thing: cafes. Lots and lots of time has been spent in cafes and as those of you who read my blog regularly, wiling away the hours in a cafe is one of my favourite pastimes 😉

As well as cakes from cafes in town and dinners cooked with Tom, we also had a rather lovely meal at Bella Italia for Tom’s brother’s birthday. I stepped away from the usual, which for me would obviously be pasta, and went with something a little heftier:

Cajun chicken burger in a ciabatta bun served with chips and an onion marmalade. It was so tasty, definitely worth it. It has left me with a craving for chips though…

All in all I’ve had a fantastic week and I’m looking forward to another!

Quickly scanning my blog I have come to realise that lately it doesn’t exactly resemble most other ‘healthy living blogs’. The last few posts have featured several indulgent frappes, tray bakes, chips and cookies (as well as other healthier meals obviously). But this is the thing. Although in my description I mention my passion for healthy living, which don’t get me wrong I still am, I don’t see this blog as a typical healthy living blog. It’s more of a life blog.

My definition of healthy living is constantly evolving. How can it change? Well this year in particular I’ve learnt that it’s to do with a lot more than the food that passes through my mouth and the energy I expend.

Healthy living is about balance and moderation, and it is also just as much about your mental health as your physical state.

I don’t eat heaps of food and I don’t eat treats everyday. But having said that, most of the time if I fancy a treat, or find myself craving some junk, I will just eat it. I’m sure many you know what it is like to struggle with slightly disordered eating, I think most women experience that sort of issue at some point in their lives. It has taken a long time and a lot of effort on my part to get to a point where I don’t feel guilty about what I eat.

Sure if I do have a bit of an absent-minded binge when studying I feel a little bad, mostly from the discomfort it causes. But I can proudly say that I have got to a state of mind where I no longer begrudge myself a few indulgences here and there.

It actually amazes that I can say that. I wasn’t sure that I ever would.

I’m not going to lie, I still know roughly how many calories I eat in a day, purely because I can’t really forget how many calories are in most foods, but I don’t count them anymore. I also do still occasionally have days when I feel a bit bloated. But I have come so far in the last year.

My relationship with food is just so much healthier. Food is fuel because I know it keeps my body functioning, something I sorely need with my condition, but food is also something to enjoy. I love cooking almost as much as I love eating and I really like searching for new recipes to try and new foods to taste.

I hope that if you are struggling, as I did for years, that you are able to take some comfort from this post. It is possible to work through it and overcome your issues, I am slowly and surely getting there. Stay strong and carry on trying, there is always hope for better times ahead!

Time Off.

I simply cannot explain how amazing it feels to have finished with this year and to enjoy a few days of relaxing with zero responsibilities. Seriously, I feel as though a huge weight has been lifted from my shoulders and I can finally fall asleep at night without feeling anxious about everything I have to do.

So on Friday morning I jumped on the train for the 4 hour journey up to stay with Tom. I was impatient practically the entire time but luckily had the seemingly endless story that is Vanity Fair. I’m still only about 60% of the way there!

Getting to Tom’s and finally being able to collapse into his arms (almost literally!) was so needed and we’ve spent the last few days just really enjoying each other’s company.

Saturday involved a trip into town where I bought myself a couple of beauty products I needed (and wanted) and we spent time catching up in a cafe by the river. The drink I had is one of my favourites, on the sugary side and pretty unhealthy but just so delicious. I can’t get it anywhere else so when I spend time here I always get it.

Raspberry mocha frappe. It really is delicious.

I also decided to go for an almond and raspberry slice which is something I adore. If there’s a treat I can almost never say no to it’s a slice of cake or tray bake 😉

Today was equally lovely, we took a trip to the cinema to watch The Avengers. I’ve already seen it but Tom hadn’t been able to and it’s definitely his type of film so I was perfectly happy to see it again. It was just as funny the second time around! I have to say I love Iron Man’s character, he has some brilliant one-liners.

Other than that we stayed in and played some computer games, I think we both needed some mind-numbing entertainment. Our choices of computer games are rather different, I like to design houses on the Sims, Tom likes a bit more action 😛 I’d forgotten quite how much fun the Sims could be, it definitely reminds me of being about 12 years old!

Dinner was really tasty this evening, spicy chicken fajitas with salad.

It’s just so nice to spend time at Tom’s, as he remarked yesterday, it’s sort of like living on your own but better. We don’t get in each other’s way, both of us still do our own things, but you have the lovely company.

June Goals.

I probably say this pretty regularly but I just cannot believe that we are already into June. This academic year seemed to drag but now it feels like it has passed incredibly quickly. Other than picking up my results later this month I have finished with not only my first year of university but I have also finished with this university. Crazy.

Before I list my goals for the new month I thought I’d go through my May Goals to see what I accomplished over the past month:

Drink 2 – 3 litres of water a day. I’m pretty sure I’ve managed this, I certainly feel like I am constantly refilling my 500ml water bottle so I think I’ve been drinking at least 2 litres a day. I feel better for it, my skin looks better and I haven’t experienced much in the way of bloating (sorry for the TMI).

Do something physical everyday. This has not been easy but on the whole, I have left the flat most days and I’ve been walking more than before. I managed a few workouts here and there and I’ve been good at doing my physio exercises daily. I have to accept that for now I cannot be as active as I used to be but I’m striving for more and I want to carry on building it up.

Read before bed. This didn’t happen on the night before my exams but otherwise I’m quite pleased with myself, I’ve carried on reading throughout my revision. I’m currently just over halfway through the 900+ word beast that is Vanity Fair!

Look after my appearance. Other than the water drinking I think this has been my most successful goal, I’ve treated myself to a couple of new makeup products and I’ve been really into my lipsticks lately. I’ve also been using Beauty Youtubers as a way to relax in the evening after revision and I may be becoming a little addicted…

So overall I’d say I’ve been pretty successful. I didn’t set myself anything particularly difficult as I knew I’d be spending the bulk of the month revising but I’m still pleased with myself. Now onto this month!

June Goals. 

Read at least 4 books. Now that I’ve finally finished with all of my exams and assessments I can finally have the time to read for pleasure! I have an absolutely gigantic pile of unread books and even more on my Kindle and I can’t wait to get through them all. The summer is definitely my favourite time to read 🙂

Try a new baking recipe. Because I’m not actually going to be at home that much this month I don’t want to aim too high on the baking front but I’d love to try something new. I’m going to try to really push the boat out with something a little more challenging than I’d usually go for. So watch this space…

Go the entire month without biting my nails. I’m not sure whether I’ve ever mentioned this on my blog before but I have been biting my nails since I was about three years old. Gross I know. I almost managed to stop about two years ago but the minute I’m stressed I get really bad. I have over three months this summer in which to finally grow my nails, wish me luck!

Work on my strength. Part of my physio is strengthening my body in order to minimize the pain and the potential damage. As I’m at my boyfriend’s for two weeks and he is an avid strength trainer who seriously knows his stuff I am definitely going to take advantage and try to build up my strength. I know it won’t be easy but every little helps.

Journal more regularly. I have a lovely black leather journal and I love to write in it, I really think it helps my development and growth as a person plus it’s a brilliant way to practice writing. During exams I wasn’t great at writing in it so I’d love to get more into it again.

So, there you have my goals for the month. I really hope I can succeed with all of them, they’re all positive things to enrich my life so it’d be great to look back in July and know that my first month off has been good for my recovery!
